Rice Salad
A simple satiating salad this salad can be a meal replacer.
It is easy to prepare and doesn’t require too many ingredients.
Makes a great accompaniment or a packed lunch.
Ingredients:
1 cup boiled rice ( leftover rice is perfect for the salad)
1 small white onion diced
Half a tomato grated
A handful blanched edamame beans
A handful of pomegranate pearls
A handful of green gram sprouts
1 tsp extra virgin olive oil
Half tsp lime juice
Salt to taste
Crushed pepper as per taste
Recipe:
Heat at the oil in a non stick pan and sauté the onion for a minute.
Add the grated tomato and continue cooking for half a minute.
Throw in the edamame followed by rice and toss gently for a minute.
Lastly add in some sprouts, lime juice and seasoning.
Place in a serving bowl and let it cool before placing in the fridge.
This is best served cold.
Garnish with fruits of choice, I have added grapes here.
Alternatives:
If you are not fond of edamame you can add boiled red beans or kidney beans instead.
The rice simply sautéed with onion and tomatoes can be complimented with beetroot strips or fruits of choice.
Chick pea sprouts go well with it as well.
