Cabbage and Carrot balls with beetroot dressing

An interesting concept of a salad!

Turn your dull looking cabbage into an interesting salad by giving it a new look.

Grate equal proportion of cabbage and carrot

Add some salt and leave it for a while before you squeeze out the water content from them.

Add some salt, paprika, cumin powder, green chilies, freshly plucked basil and parsley and mix well.

Take small portions of the mixture and shape them into medium size balls. Leave them to cool in the fridge for 15 minutes.

Slice avocado or cucumbers into flat rings or squares.

Place the cabbage and carrot balls on top of these slices on a serving platter.

Garnish the balls with a sprinkling of tiny bits of beetroot and shallots and a generous throw in of green gram sprouts.

Put drops of beetroot dressing on each ball and serve with extra dressing on the side.

The salad and the beetroot dressing

For the dressing :

In a blender blend together one beetroot and one medium tomato along with 2cloves of garlic, 1 green chili, lemon juice, salt. Once blended add in some apple cider vinegar and serve the dressing along with the salad.
